Growing system: spurred cordon and bush vine Yield per hectare: less than 80 quintals/hectare

Harvest period: mid-September/mid-October
Vinification: Cryomaceration for 24 hours followed by soft pressing and fermentation with indigenous yeasts at a controlled temperature in steel tanks. Battonage in steel for 4 months

Maturation: 4 months in steel
Ageing: 2 months in bottle

Colour:straw yellow with greenish reflections

Aroma: a beautiful blend of cedar and grapefruit, with hints of thyme and rosemary and a slight marine minerality

Taste: dry, freshness reminiscent of citrus fruits
with a beautiful mineral and savoury note

Alcohol content: 13,5 % Vol
Serving temperature: 13° C

based first courses and main courses
